Playhouse Disney’s Mickey Mouse’s April Fool’s Day Cupcakes

The Playhouse Disney website is gearing up for April Fools Day and has come up with a recipe that is sure to fool kids into eating healthy on April 1st.

Below you can find the recipe for Mickey’s April Fool’s Day Cupcakes – which aren’t really a dessert, but rather consist of meat and potatoes!

Ingredients:
2 medium russet potatoes, peeled and cut into 2-inch pieces
1 1/4 pound lean ground turkey
3 large egg whites
2 medium carrots, peeled and grated
1/4 cup shredded asiago cheese
1/4 cup low-sodium tomato sauce
1 1/2 cups panko bread crumbs
3 tablespoons fat-free milk
Salt and pepper to taste

Directions:
Preheat oven to 350 degrees F. Line a muffin tin with 8 cupcake liners.

Place potatoes in a medium saucepan and fill with cool water. Bring to a boil over high heat. Reduce heat to medium-high and cook until potatoes are soft. Drain and set aside.

In a medium bowl mix together turkey, egg whites, carrots, asiago cheese, tomato sauce and bread crumbs. Use hands to completely combine.

Place mixture into cupcake liners, mounding mixture so that it rises higher than the surface of the muffin tin. Bake until cooked through, about 22 minutes. Let cool somewhat before removing from muffin tin.

Meanwhile, place potatoes, milk, salt and pepper in a medium bowl and beat with an electric mixer until fluffy. Spread over tops of cupcakes and serve.

Makes 4 servings.

    A circus owner walked into a bar to see everyone crowded about a table watching a little show. On the table was an upside down pot and a duck tap dancing on it. The circus owner was so impressed that he offered to buy the duck from its owner. After some wheeling and dealing, they settled for $10,000 for the duck and the pot.
